Unsurprisingly, it's made by someone who's not afraid to be unconventional.

Tariq Ahmed is the brilliant cidermaker behind Revel Cider in Guelph, Ontario. He takes the "mad scientist/artist" approach to making totally unique dry apple ciders with fascinatingly different ingredients and techniques.

Soif is a prime example of the delicious results. It's a blend of two different apple ciders, combined with Montmorency cherries from Niagara, strawberries, and Maréchal Foch skins.

It pairs phenomenally well with soft, gooey cheeses such as Riopelle, Chateau de Bourgogne, and Brebirousse d'Argental. It's also great with blues such as Saint Agur and Bleu d'Elizabeth.
