Mimolette (France) with “The Great War” (Midnights)
This hard cheese from France was created when France and Holland went to war in the 1600s. The French government banned the import of Edam cheese from Holland and called on patriotic cheesemakers to create their own version. The result was Mimolette—deliciously nutty, salty, subtly sweet, and coloured bright orange to distinguish it from the enemy’s cheese.
Riopelle (Quebec) with “Delicate” (Reputation)
This soft, triple-cream cheese produced on a small island in the St. Lawrence River will melt in your mouth. It has wonderfully delicate flavours of mushrooms, cream, and a hint of butter.
Rosemary Manchego (Spain) with “Ivy” (Evermore)
This aromatic favourite at the shop is a wheel of Manchego rolled in rosemary. The thick, green layer of needles matches the forest aesthetic of the song and album. The cheese’s flavour is smooth and rich thanks to the sheep milk and features evergreen notes from the rosemary.
Langres (France) with “Champagne Problems” (Evermore)
Who could say no to a soft, creamy cheese that’s intended to be baptized in Champagne? There’s even a small divot on top of the tiny wheel to hold a splash of bubbly. The only problem with this pairing is wanting more.
