Langres AOP: Holiday Pre-Order

Pour the Champagne.

Langres is the cheese we're saving for New Year's Eve. Made in France's Champagne region, this washed-rind cheese has a bold aroma, surprisingly mild flavour, and a centre that grows creamier as it ripens.

Bring it to room temperature, open the Champagne and give it pride of place on the cheese board. Its distinctive hollow top, called the fontaine, makes it easy to recognize. Its soft, creamy centre makes it difficult to leave alone.

One little wheel. One bottle of bubbly. A very good way to welcome the new year.
