Mimolette is simply a masterpiece of French cheesemaking. 

Long-aging creates a hard interior that breaks into delectable shards of concentrated salty, nutty, butterscotch flavours that go on for days.

All-natural ground annato seeds add the stunning bright orange colour.

A precious gem for sharp cheese lovers

You know how a diamond can be made from coal? This cheese is like a diamond made from cheddar. Potent, potent umami, crammed into a package so concentrated it borders on spicy. It’s dry but not crumbly, and splinters off into shards. I’ve forced it to melt by pressing it into a hot cast iron pan (it indeed became gooey) or microplaning it into a bechamel, but it really shines all on its own as a snacking cheese (my favourite, by far). Fathoms deep in flavour, notably salted caramel, and roasted nuts. So sharp it could cut paper. Sure to be revered by lovers of zesty sharp cheddars and cave-aged gruyeres.

Incredible, a must try!!

The Mimolette is everything I expected and more. It's salty, and sweet, and has enhanced the flavour of everything we have paired it with so far!

Please buy this cheese

This cheese is rock solid to cut but it's worth your efforts. Flavour is kind of like a caramelized cheddar. Similar to blue cheese, I wouldn't look at this cheese under a microscope, but that's partially because I'm too busy eating it. Absolutely delicious.
