A lovely semi-soft cheese made with milk from Brown Swiss cows that enjoy a diet of local marsh hay giving the cheese a true sense of terroir. The brushed rind and the uniformly textured paste speckled with small eyes combine to impart subtle woodsy flavours with balanced acidic and fruity notes.
This cheese is a tribute to the many Irish immigrants who passed through Grosse Île, the quarantine station on the St. Lawrence River.
