To make this premium product, extra large "00" anchovies caught in the Cantabrian Sea are purchased directly from the fishing boats for optimal freshness. The delicate fish are then carefully salted, packed, and cured in the traditional manner for at least 20 months.
After curing, the anchovies are meticulously washed to achieve the perfect level of saltiness and then expertly sliced to remove the bones. Packing the fillets in extra virgin olive oil imparts just the right fresh flavour to balance the salt.
