L’Edel de Cléron: Holiday Pre-Order

Vacherin Mont d’Or won’t be available in Canada this holiday season. But the warm, melty ritual is back!

L’Edel de Cléron is the wheel we’ve chosen to take centre stage. Made in the village of Cléron in France’s Franche-Comté region, this soft cow’s milk cheese comes wrapped in a band of spruce bark. As it ripens, the centre becomes smooth and spoonable.

Serve it at room temperature on a cheese board, or warm it until the middle turns soft, rich and gloriously gooey. Set the whole wheel in the middle of the table with roasted potatoes, cornichons, crackers or crusty bread, and let everyone dive in.

Bring it to Christmas dinner. Give it pride of place on New Year’s Eve. Or make it the delicious reason everyone stays at the table for one more bite.
