Produced on the remote Îles-De-La-Madeleine, Quebec this small, young cheese is ripened for just 3 weeks.
It features fluffy white rind and a soft paste that has a wonderful a melt-in-your-mouth texture. Rich and mild, the main flavour and aroma notes are cream and mushrooms.
Jeune-Coeur ("young heart") takes its name from the French Canadian nickname for the fluffy white juvenile harp seals sometimes seen in the waters off the island.
Wheels vary in size, averaging around 230 g.
