This is the boldest of the three flights.
Cooper’s Rye opens with tart cherry and blackberry before moving into oak, spice, and toasted almond. Wildwood brings brown butter, toasted nuts, and a lightly aromatic rind. Comté adds a firmer alpine backbone and more savoury, caramelized depth, while Bois de Grandmont takes things in a woodsy direction, with soft texture, spruce, and forest-floor character.
Together, it gives the rye more range. The richer cheeses round out the spice, while the nutty and woodsy notes echo the oak and draw more out of the whisky.
