A soft washed-rind cheese with a ton of creaminess in a milder, more easygoing style than most Taleggios.
A pasteurized cow’s milk cheese from Lombardy, made with full-fat milk that is 95% from Swiss Brown cows, giving it an especially rich, creamy character. It is washed more lightly than a typical Taleggio, which makes for a gentler style: mellow, balanced, and less funky.
The paste is pale yellow, smooth, and supple, becoming softer and more luscious as it nears the rind. Its flavour is mild yet expressive, with notes of warm milk, cultured cream, and a soft tang that develops as it matures.
Especially good with crusty bread or polenta, and pairs well with fruit or nuts that play off its creamy, savoury side.
