Valdeón is a bold Spanish blue from the mountains of León. Made with cow and goat’s milk, it has a creamy, slightly crumbly texture and deep blue veining that brings salt, roasted nuts, gentle sweetness, and a savoury peppery finish.
Wrapped in sycamore leaves, Valdeón has a rustic, woodland feel before you even cut into it. The leaves help protect the cheese and add to its old-world character, without getting in the way of that rich, blue bite.
Spread it on crusty bread, crumble it over steak or roasted mushrooms, or pair it with pears, walnuts, honey, or a glass of sherry.
