Wonderfully nuanced aged cheddar from Prince Edward Island that continues to win awards all around the world.

The producers traveled to the United Kingdom to learn how to make cheddar in the traditional manner. They brought that knowledge home to PEI and using uniquely flavoured local milk created a clothbound ("bandaged") cheese that is indicative of the island itself.
