Based on Appenzeller, Wildwood has a rustic appearance and zesty flavours. The hard, aromatic rind gives the cheese pungent aromas typically associated with washed rind cheeses. The paste is smooth, rich, and creamy with salt and herbal notes. Named Grand Champion at the 2023 SIAL Cheese Competition.
