Each spring, Beemster in Holland uses the first milking after its cows transition back to eating fresh grass to create Graskaas (Grass Cheese).
This special Gouda is released after minimal aging. The result is a lovely soft Gouda with a delicate, subtly sweet flavour.
The video below shows the cows being released into their pastures for the first time in the sping. To say they're happy is an understatement.
Very Limited Availability
Each year, only 1000 wheels of Graskaas are produced for export outside of Holland. We're lucky enough to have one again this year.
