Graskaas (literally "grass cheese") is really special.
Beemster makes this Gouda using only the first milking of the springtime, when their cows have been released from their barns into fresh green fields for grazing.
The rich flavours are delightfully mellow and creamy with a subtle sweetness.
Given the limited amount of this special milk available, only 2000 wheels of Graskass are produced each year.
