Valençay is a striking unpasteurised goat-milk cheese. The natural rind is darkened by a dusting of charcoal powder and encases a clean and tangy tasting soft paste.
Legend has it that Valençay was originally produced in a perfect pyramid shape, complete with pointed top. But upon returning to the Valencay region from a defeat in Egypt, Napoleon lopped off the top of the cheese in a rage. It has been made with a flat top ever since.
