Canada has banned many unpasteurized cow and buffalo milk cheeses from Switzerland, France, Spain, Greece & Italy, due to a cattle-disease outbreak.
This affects the availability of favourites including Brie de Meaux, Morbier, Tomme de Savoie, Vacherin Mont d'Or, and Tête de Moine.
We'll bring back these cheeses the moment we can, but the restrictions are expected to last many months.
Conservas are Spain's answer to preserving seafood at its peak—a centuries-old tradition that elevates tinned fish into something closer to charcuterie. These aren't pantry staples; they're hand-crafted delicacies meant to be savored.
La Brújula captures Galician seafood traditions with meticulous care. Each tin is prepared by hand, from cleaning sardines one by one to slowly simmering their signature artisan sauce with fresh tomato, onion, and peppers.
We carry three expressions: Zamburiñas (small scallops from Rías Baixas caught using traditional methods that preserve the seabed), Sardinillas (sardines hand-floured and toasted in olive oil before being packed in that celebrated sauce), and Ventresca de Atún (the prized belly of Yellowfin tuna in olive oil, offering rich flavor and tender, luxurious flakes).
Conservas that honor both the sea and the craft of preserving it—rarely found outside specialty shops.
