Taleggio is a cow-milk cheese produced in the fall and winter. It's aged on wood shelves and washed weekly with sea water as it matures over 6 to 10 weeks. During this time an orange or reddish rind develops as does a funky, pungent scent. The flavour, however, is mild slight fruity and tangy notes.
Melts beautifully into pasta, risotto, or polenta.
