Seven years in ex-bourbon casks give this Guelph-made single malt layers of oak, caramel, and toasted grain. Made from malted barley, it balances that richness with soft fruit and delicate floral notes.

The nose opens with butterscotch, candied green apple, and toasted coconut. On the palate, strawberry rhubarb brings a little brightness alongside the comforting sweetness of banana bread. The finish is velvety, with poached pear and hazelnut rounding things out.

A limited release that rewards a bit of time in the glass.
