Available in large wedges of more than 200 g, it’s called Wyfe of Bath—a tasty British take on Gouda made just outside of Bath in southwest England. It’s handmade in a similar manner but isn't pressed like traditional Gouda. Instead, Wyfe of Bath is formed in a simple basket mold.
The result is a texture that's less dense and more springy than Gouda. With 4 months of aging, Wyfe of Bath develops deep, rich flavours with a really nice touch of natural sweetness.
If you’re wondering about the name, it’s borrowed from a lusty character in the literary classic Canterbury Tales from the 14th century.
