This semi-soft, surface-ripened, washed-rind farm cheese is made with thermalized whole milk from a single herd of grazing Canadienne cows from the Îles-de-la-Madeleine region. The Pied-de-Vent features a hazelnut and mushroom flavour.
Its name comes from the Îles-de-la-Madeleine expression “un pied-de-vent” (a wind foot), which refers to the sun’s rays peeking through the clouds.
