Mattagami is a firm, crumbly cheese produced up north in Kapuskasing. The cheesemaker was inspired by Cantal, an ancient French cheese that has its roots in the Roman empire.
This cheese is salty, rich and meaty in flavour with lots of umami. Try using it in place of Cheddar for a departure from the usual.
