Made with a fantastically unique blend of cow, goat, and sheep milk, this Spanish cheese is very similar to Manchego and wildly popular with our staff and customers alike. At just three months' of age, it is rich and has a high moisture content giving it buttery mouthfeel.
The flavour is delicious—mild, smooth, and somewhat grassy without the "barnyardy" notes some associate with sheep and goat milk cheeses.
And let's face it, that electric blue rind is just so damn sexy.
