Originating in the Mediterranean, haloumi is a firm, salty cheese that can take the heat of grilling or frying without melting. Instead, it developes develops a tasty caramelized crust and grill marks. (Add a squeeze of lemon to take it to the next level.)

A good substitute for Latin America's queso fresco or queso blanco.
