Formai de Mut is a hard, raw cow milk mountain cheese from Lombardy, aged for at least 12 months. Made with rich whole milk from pasture-fed cows it has an ivory paste, a thin natural rind, and a texture that is supple yet dense.
The flavour starts out sweet and savoury, then deepens with age into something more complex and gently spicy. You’ll find notes of cooked vegetables, ripe fruit, and a surprising touch of pineapple and peach, which give it a lovely alpine brightness beneath its deeper, nutty character.
Serve it at room temperature in shards or thin slices so its full aroma can come through. It is a natural fit for hearty, comforting dishes such as risotto, but it also holds its own on a cheese board with rustic bread and a glass of red or amber beer. Pair with medium-bodied red wine, amber beer, or dry cider.
