The flavour leans nutty and gently floral. Think toasted almond, sweet cream, and dried hay. There’s a mild earthiness near the rind and a clean, lingering finish. As it ages, the texture tightens and the nuttiness becomes more pronounced.
A lovely introduction to Québec sheep milk cheeses without going too bold.
