Canada has banned many unpasteurized cow and buffalo milk cheeses from Switzerland, France, Spain, Greece & Italy, due to a cattle-disease outbreak.
This affects the availability of favourites including Brie de Meaux, Morbier, Tomme de Savoie, Vacherin Mont d'Or, and Tête de Moine.
We'll bring back these cheeses the moment we can, but the restrictions are expected to last many months.
Chällerhocker (pronounced "hawler-hocker") is an unpasteurized, semi-hard cheese from the Swiss Alps. It's based on the classic Appenzeller recipe, but before its 8 months minimum aging it is washed with wine and spices. The result is a delicious, intensely flavoured cheese that will have you hooked.
Sold in 200 g or 300 g wedges. (Note: product photos are not intended to depict any particular size wedge.)
