This exquisite Jamon Iberico de Bellota comes from pigs that are 50% pure Iberico breed. They have been allowed to forage for acorns and roam freely during the montanera, the last fattening phase of the pigs from October to February.
The pigs' capacity to store fat in muscle, their acorn-rich diet, and their mobility produce meat of exceptional juiciness and flavor in their front and hind legs.
Each piece has been hand sliced by Spanish master ham carvers. (Yes, this is a profession and requires years of training!)
