Winner of BEST IN SHOW at the 2024 American Cheese Society competition.
A mild organic raw-milk cheese made in the Eastern Townships of Quebec. The line of red peppercorns running through the middle of each wheel lends a delicate pepper flavour without any heat.
This cheese is a great melter but is just as delicious sliced as a snack. For a raclette dinner, plan for 100-200 g of cheese per person.
