The bold, aged sibling to La Station's beloved Chemin Hatley, Grand Cru is a firm alpine-style cheese that takes things to the next level. Made with raw organic cows milk from the family's farm in Quebec's Eastern Townships, its aged 12 to 18 months for extra depth and complexity.
While Chemin Hatley is mellow, grassy, and buttery, Grand Cru leans richer and more intensenutty, brown-buttery, and laced with toasted hazelnut and cellar-y funk. Its dense, crystalline texture is a joy to slice and savour.
