Ubriaco al Prosecco is a delicious hard Italian cheese with both the intoxicating fragrance and subtle flavour of Italy's well-known sparkling wine. Perfect for brunch or after dinner.

With 2 months bathing in the bubbly and grape must and a further 6 months of aging, this cheese ends up with a lovely balance between savoury and sweet.
