Capocollo is a rich Italian cured meat made from the neck of the pig (the most flavourful part!) and slowly cured for 6 months.
Made in Ontario.
Canada has banned many unpasteurized cow and buffalo milk cheeses from Switzerland, France, Spain, Greece & Italy, due to a cattle-disease outbreak.
This affects the availability of favourites including Brie de Meaux, Morbier, Tomme de Savoie, Vacherin Mont d'Or, and Tête de Moine.
We'll bring back these cheeses the moment we can, but the restrictions are expected to last many months.

Capocollo is very tasty but try to get the paper off of it is terrible. Would purchase again if packaged better. Had to toss some of it as the paper in between slices would not come off.
