Made at Fromagerie Fritz Kaiser in Quebec's Eastern Townships, Tomme du Haut-Richelieu has an edible, washed rind and a supple semi-soft paste. You'll notice a lovely hay-like aroma with flavours of goat milk and roasted almonds. Great as a raclette and delicious in a grilled cheese sandwich.
