You don't see this every day.

The U.S. produces some truly excellent artisan cheeses but American artisan cheeses are ridiculously hard to obtain in Canada.

We've been fortunate to score a few wheels of one of the really good ones. Humboldt Fog is legendary. It has earned heaps of international accolades for its buttermilk and fresh cream flavours, floral notes, herbaceous overtones & clean citrus finish.

Layers upon layers

I'm not being cheeky with the title! The layer of ash added a bit of texture, but what I really loved were the different aspects of texture from top to bottom: the overall softness sandwiched by the runny layer just under the pliable rind. It had a nice tang, too; really cut through the richness.
