When the mad geniuses at Monforte Dairy in Stratford get to the end of a week, they take any surplus milks they have on hand and make them into Hodge Podge.
This particular wheel is made from goat and water buffalo milk, with a handful of peppercorns thrown in for good measure. The result is hard and crumbly but sublimely rich and delicately earthy cheese you won't be able to say no to.
